to increase gameplay variety (often good, but can distract from simplicity/ focus): increase buttons required (z, breaks), have multiple intersecting paths (the best implementation of this idea is where the speedrun is incentivised to use both paths to get the fastest time), powerup use (gravity, boosts, vehicles, etc.). Non-gameplay ways to make the track more interesting: theming, detailed visuals (which don't interfere with gameplay), secret paths (no inherent gameplay reward).
